La Guillotine is a blonde lager that was first brewed in 1989 to celebrate the bicentennial of the French Revolution, an event that had a profound effect on monastic life in Belgium. It is characterised by its pleasant smell and rich bitter flavour that remains consistent from first taste through to the after taste. The Huyghe brewery was founded 1906 and has seen two significant shake ups over the century, the first being a desperate struggle to maintain control during the first world war and the other being a company reform in the mid eighties. The company at this point had traditionally brewed pilsner beer, but during the reform the style was switched to a high fermentation bottled method. A huge line of different, quite popular beers now were produced in 1989, adopting the cologne ceramic look that the La Guillotine uses.

He talks about the La Guillotine at the 9:30 mark, in which he mentions that whilst the beer is an old brand, only very recently they have changed the recipe as it was too similar to their flagship beer, the Delerium. Whether the beer in question featured the old or new recipe when the photo was taken, I cannot say.
Probably the most fascinating part is that their distinct labelling style was commissioned with two cases of beer.
In the final moments of the video he refers to himself a the ‘crazy’ brewer and mentions that when his time comes, his 9 year old son will one day take the reigns.
